The rule of themb is...
you should buy as much UM as you can affored, and should never buy less than $100,000 per person in UM and UIM coverage.
These coverages are not that expensive, since they are secondary to the person at fault's insurance.
If you are having trouble affording UM and UIM coverage, you might want to consider raising your deductibles in your collision and comprehensive coverage.
